Ingredients
- 1 large eggplant
- 2 zucchinis
- 1 red bell pepper
- 1 green or yellow bell pepper
- 1 large onion
- 3–4 ripe tomatoes (or 400 g / 14 oz crushed tomatoes)
- 2 garlic cloves
- Extra virgin olive oil
- Thyme, oregano, or herbes de Provence
- Salt and pepper to taste

Directions
- Prepare the base sauce: Make a tomato sauce by cooking garlic, onion, tomatoes, and herbs. Spread it on the bottom of a baking dish.
- Slice the veggies: Slice the eggplant, zucchini, peppers, and tomatoes into thin rounds.
- Assemble: Arrange the slices over the sauce, alternating colors in a spiral or straight rows.
- Bake: Drizzle with olive oil, season with salt, pepper, and herbs. Cover with parchment paper and bake at 180 °C / 350 °F for 35–40 minutes. Remove the paper and bake 10 minutes more until lightly golden.
